The Best Lactation Cookies!
I love cooking and baking for my doula clients, and for myself! I especially love cookies and treats and it is a bonus when they have ingredients that sneak in some extra vitamins and nutrients. When the breastfeeding hunger strikes, these cookies really hit the spot while also satisfying a sweet tooth. They are full of healthy fats, antioxidants, and collagen for added protein. And while they are called “lactation cookies,” they are really for the whole family!
I started making these cookies for doula clients before I had my daughter. Now I think I have nearly perfected the recipe because I have made them SO many times for myself postpartum. The recipe is very versatile and you can really add in as many mix-ins as you would like. I personally love coconut, chocolate chips, and goji berries, but they are also great with nuts, dried tart cherries, or craisins.
Research shows that the best way to boost milk supply is to remove milk, not to necessarily eat certain foods. However, some people I have supported swear oatmeal boosts their milk supply. Lactation is also energetically demanding, requiring an extra 500-700 calories per day from the nursing parent. While breastfeeding, it is vital to eat enough calories and quality nutrients to replenish the calories and nourishment going to your baby.
Once you make the cookies, store them in an airtight container or make a double batch and freeze them as part of your postpartum prep. Or you can hire me as your postpartum doula and I will come to your home and make them for you 😉 !
Ingredients:
1/4 cup flaxseed meal
1/2 cup water
1 cup coconut sugar
1 teaspoon vanilla extract
1/3 cup melted coconut oil
2 cups oat flour
3/4 cups rolled oats
1 tbsp unsweetened shredded coconut
1 tbsp goji berries
1/4 cup collagen peptides (I like Great Lakes Wellness or Needed)
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon cloves or cardamom (optional)
1/4 teaspoon salt
3/4 cups dark chocolate chips
Instructions:
Preheat oven to 350 degrees F and line a baking sheet with parchment paper
Make your flax egg: mix together flaxseed meal and water; let it sit for 5 minutes while you get all your other ingredients ready.
After 5 minutes, add in the coconut sugar, melted and cooled coconut oil, and vanilla extract to the bowl. Whisk together until smooth and well combined.
Add in the oat flour, rolled oats, coconut shreds, baking soda, collagen, cinnamon, cloves or cardamom and salt. Mix until well combined. Fold in chocolate chips and goji berries.
Use a small spoon or cookie scoop and place dough on a prepared baking sheet. You should get about 12-15 cookies.
Bake cookies for 10-13 minutes until edges are just slightly golden brown around the edges.
Allow cookies to cool on the baking sheet for 10-15 minutes before removing (this helps them settle).
